Life Changes, One Week at a Time 2

If you haven't read part one, head over and check it out. Then come back to part 2. Go on, I'll wait...

Two Changes down, right?

Mr. Mind has been avoiding night shades for 9 weeks and gluten for 8 months. His skin has cleared up tremendously but he isn't healed. A few weeks ago, while driving to buy local produce, he said "I want to start running." I was shocked! I self trained for a 5k about 3 1/2 years ago. He never wanted to practice with me before nor after my race. I let my running slide, because I was doing it alone. But now he wants to pick up running. I told him "Knock yourself out!" That's what I say when I don't want to get into someone's way, but I know it wouldn't last, help or work. Mr. Mind has a horrible problem of not being consistent with much. He is a work-a-holic, but when it comes to himself, cleaning and planning things, well, now you see where I come in.

All last week, Mr. Mind laced up his shoes and ran his little heart out 3 times! I was so shocked that I actually joined him the third night. Maybe I wasn't the best running partner that day, but he wants to continue this week. So he coined a phrase to explain what we have been doing to ourselves: Life Changes, One week at a Time.

We just incorporated change #3, running. Running is best for loosing weight, being active and for the heart. For Mr. Mind, running will lower his body fat in the areas where is skin is inflamed. This will eventually help him over come HS.

Another Change is-a-coming

After a week of running, Mr. Mind and I did our normal weekend activity of grocery shopping. I asked him, 'Why do we eat pork?' We have increased our veggies and fruit intake over the past 4 months. I have tried my best to ensure that I include more than just veggies at dinner, by keeping them raw on the kitchen table for easy access and adding them to breakfast and lunch. Mr. Mind's only response was that it's a quick breakfast food, yet an unhealthy one. We barely eat pork for other meals than breakfast. That was it- Bacon, sausage and ham had to go. We want to be healthy, we need to start with eating food with benefits. Quick food is not a benefit. We might still consume it at a restaurant or someone else's home, but right now, we are going pork-less starting within 2 weeks. We looked at a freezer full of organic, natural beef from a local farm. I wouldn't be shocked if beef was next.

Goodbye Canola!

I couldn't possibly be the only one that has noticed that there is no visible difference between Canola oil and vegetable oil and that there isn't a difference between it's taste. I am not going to get into some of the crazy things that I have read about the two, but something is wrong with them and we are finished. In our house, we will consume/use olive oil, sunflower oil, coconut oil, and grapeseed oil. The health benefits from these oils not only out weigh canola and vegetable oils, but the cost out weighs it also. You are probably thinking to yourself, wait isn't olive oil most costly? Well, you are right, but when you consider how much oil you use for cooking, you will be surprise when you switch to a solid-to-liquid  form such as coconut oil or thicker oil that spreads with heat like olive oil. A little goes a long way. We have been using coconut all summer along side canola, but I'm happy to say goodbye to canola, Life Change #5, One Week at a Time.

With all these changes, do you think this is it? Absolutely not, stay tuned as I shed a little light on the most important change to come.
